A new and exciting recipe on the FitERin6 menu are veggie Fritters and they are so easy I just had to share this one with you.
The recipe is so adaptable its the perfect “I forgot to get anything out of the freezer” kind of dish.
In fact, can you work out how it was created! That’s right, nothing out of the freezer – my biggest barrier to eating well sometimes is because I am so forgetful at times! Anyway, it was a case of what is in the fridge! And before you know it these fritters were born. In fact the last time that happened the FitERin6 Pizza was formed!
A fritta is basically a scrambled egg mixture with ingredients baked or fried!
So I will give you the basic recipe for a courgette Fritta which is now a breakfast item on the new FitERin6 menu and one you can easily incorporate into your daily plans.
TOP TIP WHEN USING COURGETTE
Squeeze the heck out of it! You need to get the excess water out so squeeze in your hands or in a muslin square to drain that veggie dry!
What to do:
- Grate 1 courgette and then squeeze the excess water out of it
- In a bowl beat 1 egg
- Add the courgette
- Add 1 tsp paprika
- Add 1 tsp tumeric
- Add 4 tsp arrowroot
- Pour into a greased baking dish
- Bake at 180oC for 22 minutes until slightly golden.
- Enjoy hot or cold.
That is the basic recipe and method, its clean, simple and really tasty. But the best thing is that you can make whatever you want with it now!
Other fabbyo combinations are
- Courgette, spring onion and feta
- Courgette, mushroom and sweetcorn
- Sweetcorn and cumin
- Sweet potato, turmeric, cumin and corriander seed
- Courgette, mustard and onion
- Sweet potato, maple syrup (try it its tasty) and crispy bacon
The possibilities are utterly endless, basically take egg and arrowroot (thats what makes it slightly battery and not omelette-y) and add any flavour and veggie combination you like.
